easy Gluten-free pancakes

Serves 1-2

Ingredients:

– 2 large eggs (I use free range)

– 1 large banana

– 1/2 cup quick cook oats

– 1 tbsp ground flaxseed

– Cooking spray oil

Directions:

1) In a large bowl, mash banana until smooth texture (I use a fork for this)

2) In a small bowl, mix eggs well and add to bananas

3) Add 1/2 cup of oats and flaxseed, mix well

4) Heat pan with cooking spray

5) Cook each side for about 90 seconds

 

Serve with Greek yoghurt, fruit and/or maple syrup
